There are several piped batter shapes already on the parchment paper. The piping bag is held above the parchment paper as the chef carefully moves the tip to create a decorative pattern on top of a rectangular shape that's already been piped. The rectangular shape has a similar wavy pattern already across the body. Another similarly decorated rectangular shape is next to the one being piped.
